The swordfish meatballs are a tasty but very light dish. You can serve them as shared appetizer the second individual.
The first step is to clean the swordfish, removing the superficial skin. Then cut it to cubes. As an alternative to swordfish you can also use cod fillet or plaice.
Arrange the fish in a mixer together with the lemon zest, parsley and salt to taste, blend everything to create a dough.
The breading will consist of quinoa flekes. As a first step, pour them into the mixer and chop them coarsely.
At this point form, With the hands, the swordfish meatballs and pass them first in’egg and subsequently in the quinoa compound flekes.
Arrange the meatballs spaced apart in a pan and bake in a convection oven a 180 °C to 20 min. .
